I am going to start a new series on the blog where I try out healthy recipes and see if they actually taste nice! This time I’ll be reviewing The Happy Pear’s Vegan Brownies (super fudgy almond brownies). I got the recipe from this book. Without further ado, I’ll get started!


It makes 12 brownies.

For the ingredients you’ll need;

150g Walnuts

200ml coconut oil

200g Ground Almonds

100g White Spelt Flour

300ml Maple Syrup/Agave

40g Cocoa powder

2 Teaspoons of baking powder

1 Teaspoon of salt

200ml Rice milk/milk of your choice.

1 Tablespoon of vanilla extract


Preheat the oven to 160 degrees C/325 degrees F/gas mark 3.

Chop the walnuts into small pieces and leave 50g aside to decorate the brownies.

Melt the coconut oil and pour it into a large bowl. Add the rest of the ingredients and mix well for an even texture.

Line a flapjack tray (approx 40cm x 25cm x 3cm high) with parchment (I used coconut oil and then very lightly coated the tin with spelt flour.) and pour the mix in so it’s about 2 1/2cm high.

Bake for 18 minutes in the preheated oven. Once backed remove from the oven, scatter the chopped walnuts on top and gently press them down so they are studded in.

Leave to cool at room temperature. When cool, put into the fridge for 30mins to set fully and release its fudge power!



I found these to be exactly like they were in the book. I can’t fault this recipe at all! It’s super quick and easy, made with ingredients that you’ll already have on hand! I don’t restrict my diet at all so if I wanted I could go out and eat the most unhealthy double, triple chocolate brownie out there, but I would honestly say I would rather eat one of these. Okay..,that’s a lie. I would rather eat a mountain of these!

Exceeded my expectations and the reality was unreal! 😉 Even looking at the picture in their book vs my finished product! Can’t get better than that!
